For my simple LAN wire i'll go for CAT 5 for sure. But if need it on big scale my preference will be CAT6.

Even on a small office installation, if you pick a specific manufacturer's product and use an installer that is certified in that product you will be able to get the manufacturers warranty (usually at least 25 years). If the installer disappears or goes out of business you can get service from another certified installer. Also, Asking for certified test results will help determine the quality of the cabling vendor.
